There's something about baking on a lazy Sunday that turns up the cozy feeling 🥰 

These tender vegan muffins are filled with caramelized strawberries (start with either fresh or frozen berries) and are topped with a crisp oat cinnamon streusel. These bakery-style muffins are easy to make and are one of those treats that are wholesome enough for breakfast but so delicious you’ll crave them for dessert!

Herby Quinoa Salad with Grilled Vegetables and Hum Herby Quinoa Salad with Grilled Vegetables and Hummus 🌿

This is one of our favorite salads, or as my hubby calls it, "one of the best things I've ever eaten". 🥰 I usually use farro but, for a gluten-free version, it's great with quinoa as pictured here! 

A blend of grilled peppers and zucchinis, arugula and quinoa all tossed in a herby lemon vinaigrette and served over creamy hummus. It's perfect warm or chilled, and is a salad that actually leaves you feeling satiated.

Chocolate Hazelnut Tart 💗 Step aside Nutella, Chocolate Hazelnut Tart 💗

Step aside Nutella, your flavor isn't quite chocolaty or hazelnutty for this job. 😏

This Chocolate Hazelnut Tart is pure decadence and is so easy to make! A silky smooth chocolate hazelnut layer is nestled in a melt-in-your-mouth toasted hazelnut shortbread crust (press in, no rolling!) and then finished with a generous layer of dark chocolate ganache. It’s made without any dairy or eggs, is vegan and can be customized for gluten-free.

Cherry Tomato Tart with Pesto and Cashew Cheese ❤

New to pastry making? Free-form flakey crust can be yours without any fuss! The beauty of these rustic tarts is their imperfection which takes the pressure off. Top with a layer of creamy cashew cheese, pesto and then snuggle in sweet cherry tomatoes. Baked up, this tart is creamy, crisp and sooooo delicious!

Have you ever made your own ice cream sandwiches? Have you ever made your own ice cream sandwiches? If you haven't, it's pretty fun and (needless to say) rewarding! These cookie dough ice cream sandwiches with caramel swirls are what dreams-of-summer are made of. Nothing short of lush, they are our favorite frozen treats to have on hand year round.!

I'm not sure what feels better - passing in all of I'm not sure what feels better - passing in all of the photographs for my cookbook (like this skillet spanakopita) or now having the time to deep clean my home that's been ransacked by my little homeschoolers over the last few months... 😅🥳

The publication date for the cookbook is set for the end of this summer. I'm so excited for you to see it and hopefully dog-ear it up! All of the recipes are vegan, one-pot and made in cast iron (the best cookware ever!) Get ready for lots of better-than-take-out dishes, comforting classics, easy meals (some ready in 15-20 minutes!), cozy brunches and some pretty decadent sweet treats!
